A tough one as just about every bar in Prescott carries Bass, Guinness, and Fat Tire. ;-) You wouldn't do wrong by wandering through the bars and restaurants around Prescott's court house square.

Prescott Brewing Company (AKA: 'PBC')
130 W Gurley St A, Prescott, AZ
Located across from the court house square in Bashford Court. Excellent microbrews as well as great food. Bar as well as plenty of tables. Reservations suggested for large dinner groups.
Recommendations: IPA (yeah, I'm a "hop head").

Gurley Street Grill (AKA: 'The Grill')
230 W Gurley St, Prescott, AZ
Friendly bar, good food, plenty of sit down eating space.
Recommendations: Oak Creek Nut Brown Ale and Sonoran Corn Chowder.

Breakfast

This is the kind of place where you order 'a pancake', not a 'stack of pancakes'...yeah, the meals can be a bit large. Breakfast served 'till 2pm for the late to rise. ;)
Recommendations: country fried steak or corned beef hash and eggs with biscuits and gravy. Plenty of Cholula hot sauce regardless...

Dinner Bell Cafe

Grab a table in the back with creek view.

Burgers
Kendall's Famous Burgers & Ice Cream

Located across Cortez St from the court house square.
An old style soda joint. Perfect for the greasy burger fix!
Recommendations: Down Town burger combo on sesame bun with grilled mushrooms & swiss. Gotta try the cherry coke or have a shake/malt.

Chinese
Chi's Cuisine
114 N Cortez St, Prescott, AZ
Not a lot of tables, so get there early or plan to wait. Closes between lunch and dinner. Take out available too.
Recommendations: crispy orange beef or shrimp & chicken pad thai. The chicken lettuce wrap appetizer can be a meal itself.

Indian
Taj Mahal Restaurant

Try the lunch buffet for a variety. Dinner for a more authentic taste. Midly spiced...hey, this _is_ Arizona...

Mexican
Arturo's Mexican Restaurant

Both locations are excellent for a sit down Sonoran style meal. My favorite in town.
Recommendations: Chile Rellano and the Albondigas Soup!

Alfonso's Mexican Food

Right next to rally HQ and perfect for an inexpensive meal. Sit down or to go.
Recommendations: Carne Asada burrito or any of the breakfast burritos.

Steaks
Dry Gulch Steakhouse

A bit hard to find, but well worth it... Open only for dinner last time I visited.

Cattleman's Bar And Grill

Basic good steaks: all the fixins' are extra...if you want a baked potato, etc. you'll have to order it.
Recommendations: Baseball cut medium-rare and cowboy beans.
